Back-to-school weeks have a way of turning the entire day into a race. There are forms to sign, lunches to pack, homework to manage and activities that begin before you’ve had a chance to think about dinner.

These are the nights when a little planning earlier in the day can make all the difference. Start a slow cooker before school, use the Instant Pot when you have a shorter window, or choose a one-pot or one-pan dinner when you can cook closer to dinnertime.
