Quick, easy, luxurious and totally scrumptious. This Brie and Cranberries Baked in Puff Pastry is the perfect appetizer for the holiday season!
For the holidays and for those instances when you are short on time this is a great appetizer to make. Not only is it rich, delicious and a crowd pleaser (hello gooey warm cheese!), it also takes very little time to make.
Of course, this is only true if you buy frozen puff pastry at the market. Making puff pastry is a time consuming task. The last time I made puff pastry was in culinary school (because I had to). Commercially available puff pastry is a staple everyone should keep in the freezer (for last minute ~ “blow everyone’s minds away with your amazing cooking chops” moments!!)
Puff pastry elevates any dish to new levels. It’s delicate texture and rich flavor are sure to impress your family and friends.
Brie and Cranberries Baked in Puff Pastry
The secret to total success here is to chill the puff pastry before you bake it. Don’t stress about the wrapping, or the design or the size of your cheese wheel. The secret is “chilled pastry!”
While you cut, stretch and wrap, your pastry will get a bit warm (from your body heat and the handling) so before baking it, chill it for at least 15 minutes or stick it in the freezer for 10 minutes!)
For the cranberries, I made a very simple 15-minute, 5-ingredient compote. Simple but with a lot of flavor. The combination of sweet and tart cranberries with the savory cheese and the buttery flaky pastry is hard to resist!
Quick fixings like nuts with honey and apples with brown sugar and cinnamon are also great toppings for baked brie.
- I am giving you 2 methods to wrap the brie cheese in puff pastry. Do whichever one makes you feel more comfortable. Just think play doh that will cook beautifully as long as you cool it before baking!
- If you make holes in the puff pastry dough (this happens if you stretch it too much), wet your fingers with water and patch it! Easy! Play doh remember? No need to panic!!
- You can make the cranberry compote ahead. Store in an airtight container in the refrigerator for up to a week.
- You can wrap the brie in the puff pastry, decorate it and leave it in the refrigerator overnight. Bake straight from the refrigerator! Chilled puff pastry puffs!!!
