Creamy, thick, flavorful and easy to make. This Potato Corn Chowder made in the crock pot is a real winner!
About 8 months ago, our family relocated from Southern California. We left our home state of many years extremely excited for new adventures, new friends, many dreams and hopes.
Because of jobs and school, we needed to made the move during the holiday season. We arrived in Alabama on December 24th (yes on Christmas eve) after a 4 day trip in 2 cars with 2 kids, 2 dogs and a grandma! One of the kids got car sick occasionally and one of the dogs got car sick – always. Of course, no one ever had the same bathroom schedule so there were many stops along the way and many, many storms! Good times!!
Something we learned on our way is that McDonalds and Subways are everywhere! Followed by unusually named fried chicken places that sell beer and cigarettes (great combo!)
We arrived in Alabama to our
new home hotel room and because it was the Christmas holiday, we had to wait until after the New Year to find a house. Of course, the hubs who always tries to make things better for everyone, decorated our hotel room with Christmas lights and even a tree!!! The kids had a blast (most of the time) and we bonded almost to the point of fusing due to having to be all together in such small quarters. It was a very different Christmas!
We finally found
a house an apartment and I cannot even tell you how ready we were to eat home cooked meals and take looooong showers! Yes, fast food, hotel buffets and restaurants are fun for a little while, but not for more than a week!!
When we finally moved into a new home, we camped out (we slept in air mattresses and had no furniture – yes more good times!) until our truck arrived from California. I don’t know how many stops at unusually named chicken places they made because it took the truck company over 25 days to get here!
So, sick and tired of eating out all the time, I ventured to the nearest super center store and got myself a crock pot, a cutting board, a knife, a sheet pan and a spoon and this is the first meal I made!!
Potato Corn Chowder, it reminds me of warmth, coziness, family and home!
It is so incredibly creamy and delicious and easy to make. Comfort food to the max! You can do it with minimum effort and almost without utensils or kitchen gadgets! Now that is a plus! - Even though my recipe calls for chicken stock, you can use vegetable stock for a vegetarian version (use vegan bacon as garnish).
- I have made this recipe many more times since we moved and I have used this recipe for homemade chicken stock (it is so much more flavorful) however, the first time I made it I used store bought chicken broth with very good results.
- You can use half and half to cut on the calories but you need such a little amount of cream, you might as well use the real deal!
