Tofu scramble is a quick, savory plant-based breakfast made by crumbling tofu and cooking it with spices, nutritional yeast, and a splash of plant-based milk. Sometimes called tofu scrambled eggs, the finished scramble is tender and creamy with flavorful golden edges-familiar, satisfying, and delicious in its own right.
This easy tofu scramble recipe takes about 15 minutes, uses one skillet, and does not require pressing the tofu. Turmeric gives the scramble its sunny color, nutritional yeast adds savory depth. - Tofu: In my opinion, firm tofu makes softer curds which resembles real scrambled eggs best. Extra-firm tofu produces a slightly drier, more substantial scramble. Drain and pat it dry, pressing the tofu is not necessary.
- Plant-based milk: Unsweetened, regular oat, almond, or soy milk adds moisture and helps distribute the seasonings.
- Nutritional yeast: Adds savory, lightly cheesy flavor. Start with 1 tablespoon or use up to 3 tablespoons if you prefer a stronger flavor.
- Spices: Garlic, cumin, and black pepper build the savory base. Turmeric provides the egg-like golden color, while regular or sweet paprika adds warmth without smokiness.
- Salt or kala namak: Regular salt such as sea salt seasons the tofu but doesn’t make it taste like eggs. For that sulfurous, egg-like flavor, use kala namak also known as Indian salt. Because kala namak’s aroma becomes milder with heat, you can add another small pinch just before serving.
- Oil: Olive oil, avocado oil or any mild tasting oil works.

The ingredients above make the complete tofu scramble. If you want to add vegetables, diced onion, bell pepper, and broccoli (pictured below) are great options. Other additions are mushrooms, asparagus, spinach, kale, and tomatoes. Cook firm vegetables first; add tender greens and tomatoes near the end.

🔎 How to Make Tofu Scramble Step by Step
- Drain and pat dry the tofu: Although pressing the tofu is not necessary, I like to drain it it and wrap it in a clean kitchen towel or paper towels while I make the spice mix.
- Mix the seasonings sauce: Whisk the plant-based milk, nutritional yeast, spices, and salt or kala namak in a small bowl. Set aside
Optional – Cook Veggies: If adding vegetables, sauté firm ones such as onion, broccoli and bell peppers until crisp-tender, then remove them from the skillet. For the basic tofu scramble, skip this step.


- Brown the tofu: Crumble the tofu into the oiled skillet. Let it cook undisturbed before stirring so some of the curds turn golden.


- Finish the scramble: Stir in the seasoning mixture and cook to your preferred consistency. Add any vegetables back to the pan, taste, and adjust the seasoning.


💡 Recipe Tips: Prep & Adjustments
- Use a large skillet: I prefer a 12-inch non-stick skillet with plenty surface to brown the tofu without steaming it. If you only have smaller skillets, brown the tofu in batches.
- Leave the tofu alone at first: Constant stirring works against browning. Give the curds a few uninterrupted minutes against the hot pan before turning them.
- Brown before adding milk: Adding liquid too early lowers the surface temperature of the skillet. Browning first develops flavor; the milk added afterward restores moisture.
- Adjust the final texture: For a softer, creamier scramble, add a little more plant-based milk or stop cooking sooner. For drier scrambled tofu, let the mixture cook a little longer.
- If using Kala Namak: Indian salt (kala namak) emits a potent sulfur smell when added to the seasoning mixture. Usually, the smell dissipates quickly. As for the taste, it will definitely add that signature natural eggy taste of real eggs.
- Double the recipe: For a quick high-protein breakfast on the go, I love to double the recipe and store it into individual storage containers that are ready on busy mornings.

Serve it with avocado slices, toast, roasted fingerling potatoes, grilled tomatoes, sautéed spinach, steamed greens, or fresh berries. Scrambled tofu also makes a flavorful filling for breakfast burritos, sandwiches, and easy breakfast tacos. Add salsa, hot sauce, jpickled jalapeños or homemade guacamole when you want a little more going on.

- Reheat: To be honest, I think scrambled tofu reheats best in the microwave in short intervals. You can also reheat it in a skillet over medium-low heat. Add a small splash of plant-based milk if the scramble has become dry in the refrigerator.

Tofu Scramble
- 1 (14.5-ounce) block firm or extra-firm tofu
- ⅓ cup unsweetened unflavored plant-based milk, such as oat, almond, cashew or soy
- 1 teaspoon garlic powder
- ¼ teaspoon ground cumin
- ¼ teaspoon ground turmeric
- ¼ teaspoon regular or sweet paprika
- ¼ teaspoon ground black pepper
- ½ teaspoon sea salt, Kosher salt or Indian black salt kala namak, plus more to taste
- 1 to 3 tablespoon nutritional yeast, plus more to taste,
- 1 to 2 tablespoons olive oil, divided if using vegetables

Instructions
- Drain the tofu and pat it dry with paper towels or a clean kitchen towel. Pressing is not necessary.
- Whisk the seasoning mixture: In a small bowl, whisk together the plant-based milk, garlic powder, cumin, turmeric, paprika, black pepper, salt or kala namak, and nutritional yeast. Set aside.
- Cook optional vegetables: Heat 1 tablespoon of the olive oil in a large 12-inch skillet over medium-high heat. If using firmer vegetables, sauté them with a pinch of salt and black pepper until crisp-tender, then transfer them to a plate. Skip this step for the plain scramble.
- Crumble the tofu: Add additional oil to the skillet if needed. Crumble the tofu directly into the pan with your fingers. Break up very large pieces with a wooden spoon or spatula so the curds resemble scrambled eggs.
- Brown the tofu: Spread the tofu across the skillet and cook without stirring for 3–4 minutes. Stir, then cook for another 2–3 minutes, until the released moisture has mostly evaporated and some pieces are golden brown.
- Add the seasoning mixture: Pour the plant-milk mixture into the skillet. Cook, stirring frequently, until most of the liquid has evaporated and the scramble reaches your preferred consistency.
- Finish: Return cooked vegetables to the pan, if using. Wilt tender greens in at the end and fold tomatoes in last. Taste and adjust the seasoning. Finish with another small pinch of kala namak for a stronger egg-like aroma, if desired. Serve with preferred toppings.

- Use a large skillet: A 12-inch skillet gives the tofu room to brown instead of steam.
