There’s something about the simplicity of whipped cream and fruit mixed together. No matter how you serve it – topped, layered or whipped together – it’s just always delicious and somewhat comforting.
On summer days when I would rather be lazy than sweat in the kitchen, this fun Mixed Berry Fool dessert is sure to please everyone. Best part is, it comes together in no time! This particular recipe seems appropriate for 4th of July (hint-hint) but the truth is you can use whatever fruit you have. It’s all delicious.
A fruit fool is an English dessert that combines stewed fruit with custard. To make things easier, whipped cream is used instead. Perhaps, you have heard about another English dessert called Eton Mess, they are both pretty similar with a small difference – Eton Mess incorporates crushed meringue cookies into the mix!
Since I absolutely love meringue cookies, I just had to add them to my Mixed Berry Fool! Seriously, meringue cookies don’t stand a chance with me. I have to be honest, I found them at a store very similar to Home Goods and bought the biggest bag they had! I used 12 small cookies on this dessert because that’s all I had left! Yes, I ate the whole bag in one sitting!!! My kids weren’t very happy about it, but who can resist crunchy sweet pillows of heaven that melt in your mouth?
Kathy’s Notes
- Liquor stores sell tiny bottles of liquor just for a few dollars. Sometimes I get those if all I need is a very small quantity for one recipe. However, feel free to use plain water instead if you don’t have some available.
- With this dessert, a little goes a long way! Small portions are key!
- Make your family and guests assemble their own fool! Put them to work! I can guarantee they will have fun (and if you have ME over make sure you have extra meringue cookies – I will devour them!).

Mixed Berry Fool
Ingredients
For the Blueberry Sauce
- 1 cup blueberries
- 1 tablesppon berry or orange liquor (like Framboise or Grand Marnier)
- 1 tablespoon water
- 2 tablespoons sugar
- 1 tablespoon freshly squeezed lemon juice
For the Strawberry Sauce
- 1 cup strawberries, roughly chopped
- 1 tablespoon berry or orange liquor (like Framboise or Grand Marnier)
- 1 tablespoon water
- 2 tablespoons sugar
- 1 tablespoon lemon juice
For the Rest
- 2 cups heavy whipping cream, chilled
- 1 teaspoon pure vanilla extract
- 1 tablespoon sugar
- 12 small meringue cookies, broken into small pieces
Instructions
- For the blueberry sauce, combine all the ingredients in a small non-reactive saucepan over medium heat. Cook for about 6 to 8 minutes or until thickened and bubbly. Remove from the heat. Cool to room temperature.
- For the strawberry sauce, combine all the ingredients in a small non-reactive saucepan over medium heat. Cook for about 6 to 8 minutes or until thickened and bubbly. Remove from the heat. Cool to room temperature.
- In the bowl of an electric mixer fitted with the whisk attachment, beat the cream until frothy. Add the sugar and the vanilla and beat on medium high until it forms firm peaks. Be careful not to over beat it.
- Spread a base of whipped cream into the bottom of an individual serving dish. Add a layer of blueberry sauce, followed by another layer of cream. Top with a few pieces of meringue cookies.
- Top with a layer of strawberry sauce, followed by a dollop of whipped cream.
- Garnish with berries and pieces of meringue cookies. Serve immediately or chill for a few hours.
