
Simple Amaretti Cookies
These soft on the inside and crunchy outside cookies are made out of egg whites, almond flour and sugar. They have perfectly sweet almond flavor, almost like marzipan inside. The recipe is incredibly forgiving (unlike macarons) and you can even skip whipping the egg whites! I promise, they work every time.
Ingredients
- 3 cups almond flour
- 1 ¼ cups granulated sugar, divided
- 4 large egg whites
- 1 Tbsp amaretto
- 2/3 cups whole almonds
Instructions
- Combine almond flour and 1 cup sugar. Add egg whites and amaretto and mix until combined. Let stand at room temperature for 1 hour.
- Preheat an oven to 350 F.
- Put ¼ cups of sugar into a shallow bowl. Shape dough into balls size of a walnut and roll in the sugar.
- Place dough balls on a cookie sheet, slightly flatten them and press an almond in the center. Bake for 13-15 minutes until puffed up and cracked slightly, and lightly browned around edges.
- Remove from cookie sheet to a cooling rack to cool completely.
Notes
- Most of the amaretti recipes call for egg whites whipped to soft peaks, but this simpler version also works!
