Tahini Sauce

Ingredients
- 6 garlic cloves minced or pressed
- 1/4 cup fresh lemon juice
- 1/2 cup tahini
- pinch ground cumin
- 1/2 teaspoon sea salt or Kosher salt
- Ice cold water about 6 tablespoons or more as needed
Instructions
- Start by infusing the lemon juice with garlic flavor. In a small bowl, combine the garlic and lemon juice. Allow to sit for 10 minutes.
- Pour the lemon mixture through a fine mesh strainer set on a medium bowl. With the back of a spoon or a spatula, press out as much liquid as you can, then discard the garlic.
- Whisk in the tahini, a pinch of ground cumin and salt together until all the ingredients are well blended. If the mixture seizes up and turns pasty, don’t worry!
- Whisk in ice cold water, a couple of tablespoons at a time, until the water is fully incorporated and the mixture is smooth before adding any additional water. Keep adding additional water, two tablespoons at a time, whisking in between each addition, until a light sauce is formed.
- Season to taste with salt and serve or store in an airtight container in the refrigerator for up to a week. Freeze up to 1 month.
