It’s rich, fluffy, crazy moist, and slathered in the most luscious vegan chocolate buttercream. And the best part? You probably have everything you need in your pantry already! ✨

INGREDIENTS:

Cake:
 • 1 cup unsweetened almond milk
 • 1 tbsp apple cider vinegar
 • 2 cups all-purpose flour
 • 1¾ cups sugar
 • ¾ cup cocoa powder
 • 2 tsp baking powder
 • 1½ tsp baking soda
 • 1 tsp salt
 • ½ cup vegetable oil
 • ⅔ cup unsweetened applesauce
 • 2 tsp vanilla extract
 • 1 cup hot coffee or boiling water

Frosting:
 • ¾ cup vegan butter, softened
 • 1 tsp vanilla extract
 • ¾ cup unsweetened cocoa powder
 • 2½–3 cups powdered sugar
 • ¼–½ cup plant milk

These golden, crispy tortilla chips are made with just 3 ingredients and will ruin you for the bagged kind forever! 
🧡 INGREDIENTS (save this!):
1 1/2 to 2 cups vegetable oil (or canola oil)
12 corn tortillas
Flaky sea salt
👩‍🍳 INSTRUCTIONS:
Cut tortillas into fourths and line a baking sheet with paper towels.
Pour oil into a sauté pan (1/4 to 1/2 inch depth).
Heat oil to 350°F (or until a small piece of tortilla sizzles).
Carefully add tortilla triangles in a single layer—don’t overcrowd!
Fry for 2-3 minutes until golden and crispy.
Transfer to paper towels with a spider strainer and IMMEDIATELY season with salt.
Repeat until all chips are done.
🔥 PRO TIPS:
Use high smoke point oil like vegetable or canola (avoid olive or coconut oil)
Keep oil at 350°F throughout cooking
Salt immediately after frying when chips are hot
For a large batch, keep warm in a 250°F oven

This Mexican Street Corn Salad is loaded with the flavors of roasted corn, jalapeños and Cotija cheese in a creamy, tangy and smoky dressing. All the delicious flavors of elote but with 90% less risk of public humiliation! (Sorry, Michael Bublé) 😉
🧡 INGREDIENTS (save this now!): 
2 (12 oz) bags frozen corn, thawed (or 5-6 ears fresh corn)
4 green onions, sliced
1/4 cup red onion, finely chopped
1 jalapeño, seeded and finely chopped
1/4 cup fresh cilantro, chopped
1/2 cup Cotija cheese, cut into small cubes
🌶️ CREAMY LIME DRESSING:
1/4 cup mayonnaise
1/2 cup Mexican crema or sour cream
1 garlic clove, minced
2 tablespoons fresh lime juice
Zest of 1 lime
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
👩‍🍳 INSTRUCTIONS:
Make the dressing by mixing all dressing ingredients in a small bowl.
Roast the corn in a cast iron skillet over medium-high heat for 3-4 mins until charred. (Or grill corn on the cob for 10 mins then cut kernels off.)
In a large bowl, combine roasted corn, jalapeños, green onions, red onions, cilantro and Cotija cheese.
Pour the creamy lime dressing over the salad and toss to combine.
It’s fresh, smoky, tangy, and guaranteed to be the first bowl to disappear at your Cinco de Mayo party. So go ahead, and…

🧡 INGREDIENTS:
3 cups cubed seedless watermelon (makes about 1 cup juice)
2 oz (1/4 cup) fresh lime juice
4 oz (1/2 cup) tequila blanco
1 oz triple sec or Grand Marnier
1-2 oz agave nectar or simple syrup (optional, depending on watermelon sweetness)
Coarse kosher salt, Tajin, or chili-salt mix for rimming
Lime wedges and watermelon slices for garnish
👩‍🍳 INSTRUCTIONS:
Blend watermelon in a blender until smooth, then strain through a fine mesh sieve.
Chill glasses in the freezer for 15 minutes.
Wet rims with lime wedge and dip in salt or Tajin mixture.
In a cocktail shaker with ice, combine watermelon juice, lime juice, tequila, triple sec, and sweetener if using.
Shake vigorously for at least a minute until frothy and well chilled.
Strain into prepared glasses and garnish with watermelon wedge or lime slice.
🔥 PRO TIP: Always use good quality tequila (100% agave). Unless you enjoy headaches, in which case, you do you!
