Fried Sweet Plantains (Maduros)

Ingredients 

  • 2 large very ripe plantains the darker the skin, the sweeter they will be
  • ½ cup neutral oil vegetable oil, avocado oil or canola oil
  • Sea Salt

Instructions 

  • Trim the ends of each plantain. Using a paring knife, cut a slit along the length of the plantains, avoiding cutting into the flesh. Remove the peels and discard.
  • Slice each plantain diagonally, at a bias into ½-inch slices. Set aside.
  • In a large skillet, heat the oil over medium high heat. When the oil is hot and shimmers, working in batches, pan fry the sliced plantains until golden brown, caramelized, with crispy edges about 2-3 minutes per side.
  • Transfer the fried sweet plantains to a plate lined with paper towels to drain any excess oil.
  • Season with salt while hot. Serve immediately.

Recipe Notes

  • You can season fried sweet plantains with a mixture of brown sugar and cinnamon.
