Instant Pot Pork Carnitas

INGREDIENTS

Lime Juice

Orange Juice

Pork Shoulder

Mexican Beer

Garlic

Cumin

Onion Powder

Chili Powder

Pat the pork dry, season with salt and pepper, then sear in batches until browned.

Deglaze the pot with beer, orange juice, and lime juice, scraping up the browned bits.

Stir in the seasonings, then return the pork and its juices to the pot.

Pressure cook on high for 60 minutes, natural release for 15 minutes, then reduce the cooking liquid for 5 minutes.

Shred the pork, discard excess fat, and toss with the reduced cooking liquid.

Broil for 2–4 minutes per side until the edges are golden and crispy.

Serve and enjoy!

Sear in batches. Overcrowding lowers the temperature of the pot and causes the pork to steam. Give the pieces enough room to make contact with the hot surface.
