Sock It To Me Cake

My husband and kids told me they want me to make this again while they were still eating it. The recipe is fantastic and very easy. Thank you

Baking Soda

INGREDIENTS

Sour Cream

Brown Sugar

+

Pecans

+

Eggs and Butter

+

Granulated Sugar

+

Flour

+

Vanilla Extract

+

Salt

+

Confectioners' Sugar

+

Milk

In a small bowl,  mix together the streusel ingredients.

Sift together the flour, salt and baking soda in a medium bowl.

Beat the butter until creamy, then add the sugar and beat until fluffy.

Add the eggs one at a time beating after each addition.

Add the rest of the cake ingredients and mix to combine.

Pour half of the batter into the pan and top with the streusel.

Pour the remaining batter over and bake.

Make the icing and spoon it over the cooled cake.

Serve and enjoy!

Don’t over-mix the cake batter. Overmixing activates the gluten in the flour making the cakes dense.
