Instant Pot Pho

Coriander and Cloves

INGREDIENTS

Ginger and Cilantro

Brown Sugar

Fish Sauce and Oil

+

Garlic and Onions

+

Pepper Corn

+

Broth

+

Star Anise

+

Chicken Thighs

+

Fennel Seeds

+

Cinnamon

Salt and Black Pepper

Sauté the onion, ginger and garlic.

Add the chicken thighs, cilantro and pho spices.

Add the chicken stock, fish sauce, brown sugar, some salt and 2 cups of water into the pot.

Cook on high pressure, then do a quick release.

Strain the broth through a fine-mesh sieve lined to discard the solids.

Shred the chicken and discard the bones.

Divide the cooked noodles and chicken into serving bowls and pour the hot broth over.

Serve and enjoy!

If you purchase skin-on chicken, remove the skin and remove any excess fat to keep the soup lean.
