Carrot Soup

This soup was delicious! Even my picky eaters loved it. A keeper!

Onion

INGREDIENTS

Vegetable Broth

+

Coconut Milk

+

Coconut Oil

+

Orange Juice

+

Celery

+

Sweet Potatoes

+

Ginger

+

Turmeric

+

Salt and Black Pepper

Carrots

+

Sauté the onions, carrots and sweet potatoes over medium heat.

Add seasonings and cook until onions become translucent.

Stir in the orange juice and the vegetable stock.

Bring to a boil and simmer until the vegetables become tender.

Puree the soup until smooth.

Stir in the coconut milk and season with salt and pepper. Simmer.

Serve and enjoy!

If you want to make this easy soup with carrots only, skip the sweet potatoes and add about 3-4 additional carrots.
