Coconut Curry Soup

This recipe is delicious AND healthy!! I love this soup so much, I make it at least once a week during cold weather.

Fish Sauce

INGREDIENTS

Bell Pepper

Coconut Oil

+

Coconut Milk

+

Mushrooms

+

Soy Sauce

+

Broth

+

Garlic and Ginger

+

Shrimp

+

Red Curry Paste

+

Green Onions and Basil

+

Brown Sugar

+

Lime

Sauté the red bell peppers and mushrooms.

Add the minced garlic and ginger and cook until they become aromatic.

Add the red curry paste.

Add the broth, soy sauce, fish sauce, coconut milk, pepper and brown sugar and bring to a gentle simmer.

Add the shrimp and cook until the shrimp turns pink.

Remove the pot from the heat and stir in the lime juice, green onions and chopped basil.

Serve and enjoy!

Don’t substitute red curry paste with curry powder. They are completely different ingredients.
