Shrimp BLT with Herb Aioli

It’s quick enough for a weeknight, impressive enough for guests, and one of those recipes that makes you stop mid-bite and think…oh wow, this is good.

Bacon

INGREDIENTS

Shrimp

Bread

+

Tomato

+

Mayonnaise

+

Basil

+

Capers

+

Scallions

+

Lemon Juice

To make the aioli, combine mayonnaise, garlic, lemon juice, capers, basil, and scallions. Season with salt and pepper.

Toss shrimp with olive oil, salt, and pepper. Then cook it over medium-high heat until opaque.

Lightly toast bread until golden and crisp.

Spread aioli on bread. Add lettuce, layer tomatoes and season with salt and pepper.

Add crispy bacon, top with shrimp (6-8 per sandwich). Close and press gently.

Serve and enjoy!

Don’t overcook shrimp! They go from perfect to rubbery fast. Pull them as soon as they turn opaque. Shrimp are perfectly cooked when they turn pink and curl into a loose “C” shape.
