Shakshuka (Eggs in Tomato Sauce)

This quick and easy meal is made in a single skillet which means, less clean up!

Sauté the onion and bell pepper until softened.

Cook the garlic, paprika, cumin, and coriander until fragrant.

Add the tomatoes and seasonings, and simmer for about 10 minutes,

Use a spoon to make small wells in the sauce and add the eggs.

Cover the skillet and cook until the egg whites are just set.

Sprinkle with cilantro and parsley and add any optional toppings.

Using crushed tomatoes saves a bit of time and creates a rustic, smoother sauce while hand-crushed whole tomatoes give a more rustic texture.
