Fresas con Crema or Strawberries and cream is a fruity and refreshing traditional Mexican dessert made with fresh strawberries in a creamy, sweet and tangy sauce. Check the Chef's notes for a dairy free option.
In a large mixing bowl, whisk together the sour cream, condensed milk, evaporated milk and vanilla extract until evenly combined.
Layering Strawberries and Cream
Hull the strawberries and discard the stems. Cut the strawberries into bite size pieces or into thin slices.
Start layering the berries and cream. Add a couple of spoonfuls of strawberries into a glass or cup (about 1/4 cup), Pour some of the cream mixture over the berries. Add more fruit and top with the cream. Layer fruit and cream until the cups are full.
Notes
Instead of full-fat sour cream you can use light sour cream, creme fraiche or plain Greek yogurt.
Substitute evaporated milk with heavy cream, half and half or whole milk, if preferred.
If the strawberries are too tart, sprinkle about a tablespoon of sugar over the cut berries. Gently toss and allow to sit for 5 to 10 minutes.
