Candy Bacon (Pig Candy)

  • Preheat the oven to 350 degrees Fahrenheit and place the oven rack in the middle position.
  • Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the bacon slices in a single layer on the baking rack.
  • Mix the brown sugar and black pepper in a small bowl.
  • Sprinkle the sugar mixture evenly over the bacon (do not flip and sprinkle on the second side). Use your fingers to spread the sugar mixture evenly over each slice.
  • Bake for about 22-25 minutes or until the the sugar is bubbling and the bacon is crispy, rotating the sheets halfway through the cooking process.
  • Remove from the oven and transfer to a cooling rack or to a plate or baking sheet lined with parchment paper. Cool for about 10 minutes and serve.

Notes

  • Center cut, thick bacon works best.
  • Don’t use dark brown sugar.
  • Get good quality bacon for best results.
  • Store in an airtight container for 2-3 days.
  • If you need to use 2 baking sheets to fit the bacon comfortably, place 2 oven
    racks in the upper-middle and lower-middle positions
  • You can use 1/8 teaspoon cayenne pepper instead of the ground black
    pepper.
