Peach Bellini

Ingredients

  • 16 ounces frozen peach slices or chunks, (454 g / about 3 cups)
  • ¼ cup peach schnapps or peach vodka, (2 fl oz / 60 ml)
  • 1 cup peach nectar, (8 fl oz / 240 ml)
  • 1 bottle Prosecco or other sparkling wine, (750 ml / about 3 cups)
  • Fresh peach slices and/or mint leaves, for garnish

Instructions

  1. Add the frozen peaches, peach schnapps or peach vodka, and peach nectar to a blender.
  2. Blend until smooth.
  3. Add the Prosecco and blend very briefly, just until combined. Do not over-blend, or the sparkling wine will lose too many bubbles.
  4. Pour into glasses and garnish with fresh peach slices and/or mint leaves. Serve immediately.

Notes

  • Prosecco: Traditional for Bellinis, but another sparkling wine or champagne can be used.
  • Peach schnapps: Makes the drink sweeter and more peach-forward. Peach vodka gives it a slightly cleaner, less sweet flavor.
  • Peach nectar vs peach juice vs sweetener: By using peach nectar we give this cocktail the right amount of sweetness with a peach forward flavor. If using peach juice, you may need to adjust the sweetness level by adding simple syrup or agave syrup.
  • No Peach Snapps? No problem: You don't need to rush to a liquor store to get PeachSsnapps or peach vodka. Omit it, the drink will still be delicious!
  • Chill it: Use chilled Prosecco for the best flavor and texture.
  • Frozen peaches: Make the drink cold and smooth without needing ice.
  • To make ahead, blend the frozen peaches, peach schnapps or peach vodka, and peach nectar up to 1 day ahead. Refrigerate, then add the Prosecco just before serving.
  • For a non-alcoholic version: omit the peach schnapps or peach vodka and use sparkling white grape juice, sparkling cider, or sparkling water instead of Prosecco.
