Lemon Blueberry Waffles

  • Preheat the waffle iron according to the manufacturer's instructions.
  • In a large bowl, combine the sugar and lemon zest. Rub the sugar mixture with your fingertips. This releases the natural lemon oils of the zest into the sugar making it fragrant.
  • To the same bowl add the flour, baking powder, baking soda and salt. Set aside.
  • In a medium bowl, whisk together the milk, lemon juice, eggs and vanilla. Whisk the wet mixture into the flour mixture until a batter is formed.
  • Whisk in the melted butter until just incorporated making sure you don’t overman the batter. With a spatula, fold in the blueberries until combined.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour some of the batter onto the greased waffle iron. Close the lid and cook until the waffles are a deep golden brown and slightly crisp, about 3-5 minutes. Repeat with the remaining batter. Serve.
