White Bean and Tomato Soup (Tuscan-Style)

This budget-friendly, one-pot meal uses simple pantry ingredients. It’s meal-prep friendly, naturally hearty and incredibly versatile.

White Beans

Cook the onion, carrots, and celery until softened.

Stir in the garlic and tomato paste and cook until fragrant.

Add the tomatoes, herbs, broth, bay leaf, salt, pepper and parmesan. Bring to a boil, and then simmer.

Stir in the white beans and the chopped greens. Simmer until the potatoes are tender.

Remove the bay leaf and Parmesan rind. Taste and adjust seasoning.

Serve and enjoy!

Remove some of the beans and the potatoes from the soup, mash them with a fork and add them back to the soup for extra creaminess.
