White Chicken Chili

Turned out delicious. So tasty and easy. I will be making this weekly.

Olive Oil and Lime Juice

INGREDIENTS

Chicken Broth

+

Onions and Garlic

+

Green Chiles and Corn

+

Chicken Breast

+

Cream Cheese

+

Half and Half

+

Great Northern Beans

+

Green Onions and Cilantro

+

Cumin and Paprika

+

Chili Powder

+

Oregano

+

Garlic Powder

+

Salt and Black Pepper

Mash or process some of the beans in a food processor or blender.

Cook the onions until they become soft.

Stir in the seasoned chicken and cook for a few minutes.

Stir in the garlic, green chiles and then the spices.

Stir in the chicken broth, the beans and the corn and bring to a boil, then simmer.

Whisk in the cream cheese and the Half and Half and simmer.

Stir in the lime juice, green onions and season to taste.

Serve and enjoy!

For this bean chicken chili recipe, I use the beans as a thickening agent, but you can also use masa harina.
