Turkey Gumbo

with Andouille Sausage

We made this with our turkey leftovers. It was DELICIOUS! I will be making it with chicken. This recipe is too good to only make once year.

Diced Tomatoes

INGREDIENTS

Flour and Butter

+

Onions and Celery

+

Red Bell Pepper

+

Andouille Sausage

+

Garlic and Scallions

+

Turkey

+

Worcestershire sauce

+

Dried Oregano and Thyme

+

Bay Leaves

+

Stock or Broth

+

Salt and Black Pepper

Cook the Andouille sausage with butter until lightly browned.

Melt butter, add flour and cook, whisking constantly.

Add the veggies, Worcestershire sauce, salt and pepper, and cook until tender.

Add the stock and the rest of ingredients. Bring to a boil and then simmer.

Return the Andouille sausage, add the shredded turkey and simmer.

Serve and enjoy!

Don’t get rid of the andouille sausage drippings, they are needed to make the roux.
