Sweet Potato Cornbread

Sweet Potatoes

Coat the inside of a cast iron skillet with oil and place it in a hot oven.

Combine the dry ingredients in a bowl.

In another bowl, whisk together the wet ingredients until smooth.

Stir the wet ingredients into the dry ingredients and mix until just combined.

Pour the batter into the hot skillet and smooth out the top with a spatula.

Bake cornbread until the center is completely set and the top is golden brown.

Pouring the cornbread batter into a hot cast iron skillet helps develop a nice caramelized crust and those beautiful golden brown crispy edges.
