Sweet Corn Ice Cream

I love this ice cream! Seriously, the corn flavor is so, so good and that caramel swirl is genius. I know it sounds a little unusual but man alive this is good stuff.

Heavy Cream

Fresh Corn

Egg Yolks

Milk

Salt

Why You'll love this recipe

You may be thinking that I have lost my mind, but corn and cream or milk are a match made in heaven.

Add the corn cobs into to a saucepan with milk, cream, and 1/2 cup of sugar.

Bring mixture to a boil and then allow it to sit for 10 minutes.

Discard cobs and blend the corn/milk mixture until smooth.

Bring the mixture to a simmer.

Whisk the egg yolks and the remaining sugar and temper them.

Cook the mixture until it thickens, then strain it.

Pour the corn mixture into an ice cream maker and process according to the directions.

To make the caramel, melt sugar until amber-brown, stirring with a spatula.

Add the butter, then remove the pot from the heat and slowly  add the rest of ingredients.

Layer about a third of the ice cream into a container and drizzle about 2 tablespoons of caramel on top.

Repeat the process two more times. Then using a chopstick, swirl the ice cream.

Serve and enjoy!

Before adding the caramel to the ice cream, cool the caramel completely.
