WHY YOU'LL LOVE THIS RECIPE?

You can also use ground lamb, turkey, beef, pork, or make it vegetarian or vegan by using plant-based ground meat! This is a wonderful addition to your Thanksgiving recipe collection.

Slice the squash lengthwise from its tip to the stem and scoop out the seeds with a spoon.

1

Drizzle the squash  with oil, season it with salt, pepper and cinnamon, and roast in the oven.

2

Cook the onion and garlic with the spices.

3

Add the ground meat and cook

4

Stir in the broth and the tomato paste, cook for a couple of minutes and season to taste.

5

Remove the squash from the oven and scrape about two tablespoons of the flesh.

6

Add the scooped squash with the rest of ingredients into the meat mixture.

7

Fill the cavities with the stuffing and return to the oven for a few minutes.

8

Top with whipped cheese (or cashew cream if choosing the vegan option).

9

Serve and enjoy!

Instead of using whipped cheese as a topping, you can use feta cheese, or a dollop of plain Greek yogurt, plant based yogurt, sour cream or cashew cream.
