Pat dry the lamb racks.

Process all the ingredients for the crust until just combined.

Season the lamb and allow to sit at room temperature for about an hour.

When shopping for lamb, choose lamb meat that is rosy or pinkish in color. Lamb that looks dark red is showing signs of age and may not be as tender.
