Pumpkin Whoopie Pies

I could not stop eating them! So good! I don’t like pumpkin pie but this I could eat any time!

Confectioners' Sugar

INGREDIENTS

Baking Powder

Baking Soda

+

Dark Brown Sugar

+

Flour

+

Cinnamon and Salt

+

Ground Ginger and All-Spice

+

Vanilla Extract

+

Pumpkin Puree

+

Cream Cheese

+

Oil and Butter

+

Eggs

Whisk the dry ingredients and set aside.

In a separate bowl, whisk the brown sugar and oil together until well combined.

Add the rest of wet ingredients and mix until combined.

Sprinkle the flour mixture over and whisk until all the ingredients are well combined.

Using a small ice cream scoop, drop the dough onto the prepared baking sheets.

Bake and then allow the cookies to cool completely.

To make the filling, sift the confectioners’ sugar first and set aside.

In a bowl, beat the butter until it’s completely smooth.

Add the rest of ingredients and beat until well combined.

Assemble your pumpkin whoopie pies.

You can use pumpkin pie spice instead of the different spices listed in the recipe.
