Oreo Cupcakes

with Cookies and Cream Frosting

These rich double chocolate Oreo cupcakes with delicious and creamy cookies and cream frosting are very easy to make from simple pantry ingredients.

Cream the butter and both sugars until light and fluffy.

Add the eggs one at the time and mix until incorporated.

Whisk together the buttermilk, vanilla, coffee, and sour cream.

In a separate bowl, sift together the dry ingredients.

Add the dry ingredients and the buttermilk mixture to the butter mixture.

Add the crushed Oreos to the cupcake batter and mix until combined.

Divide the batter among the cupcake tins and bake.

To make the frosting, beat all the ingredients until it has nice pipeable consistency.

Stir in the Oreos, and with a spatula mix to combine.

Buttermilk is a must for this recipe. You can make your own at home by mixing 1 cup of milk with 1 tablespoon of vinegar or lemon juice.
