Lemon Cheesecake

I tried this recipe this morning and it was amazing! My new top 1 dessert for the summer

INGREDIENTS

Graham Cracker Crumbs

Almonds

Sugar

Cream Cheese

+

Eggs

Vanilla Extract

Lemon Juice

Heavy Cream

Combine the nuts and the graham crackers and process until fine crumbs form.

Combine the crumbs, sugar and melted butter. Then press the crust into the pan.

Bake the crust.

Combine the sugar and the lemon zest rubbing it with your fingertips.

Beat the cream cheese and lemon sugar mixture until smooth and creamy.

Add the eggs and stir in the vanilla extract, lemon juice and heavy cream.

Pour the cheesecake filling over the crust and bake in a water bath.

Remove the cheesecake from the oven and from the water bath and allow it to cool.

Spread a layer of lemon curd over the top, and garnish with whipped cream and lemon slices.

Serve and enjoy!

To prevent cracks, the cheesecake needs to cool slowly. Turn the oven off, crack the oven door open and allow the cheesecake to cool sitting in the oven for about an hour.
