Tortellini Soup

with Italian Sausage and Spinach

I made this last night and holy cow, it’s delicious!

Italian Seasoning

INGREDIENTS

Carrots and Tomatoes

+

Onions and Garlic

+

Broth

+

Italian Sausage

+

Spinach and Basil

+

Tortellini

+

Olive Oil

+

Parmesan Cheese

+

Heavy Cream

+

Red Pepper Flakes

+

Salt and Black Pepper

+

Cook the onions, carrots and garlic until the onions become soft.

Add the Italian sausage and cook, breaking it up into smaller pieces.

Add the tomatoes, stock and seasonings.

Bring the soup to a boil, lower the heat, cover the pot and simmer.

Stir in the spinach and tortellini noodles and cook until the pasta is tender.

Stir in the heavy cream, fresh basil and red pepper flakes.

Top with parmesan cheese.

Serve and enjoy!

The cream in this soup can be substituted with half and half or omitted, if preferred.
