Pork Tenderloin

INGREDIENTS

Cornstarch

Olive Oil

Garlic Powder

Italian Seasoning

Chicken Broth

Pork Tenderloin

Salt

WHY YOU'LL LOVE THIS RECIPE?

The entire cooking process is done in one pot! Use the sauté function to brown the pork, set the pot to manual to cook it, and make the sauce/gravy in the same pot!

Combine the spice rub ingredients in a small bowl.

Rub the spices onto the pork.

Set the Instant Pot to sauté and sear the pork on both sides.

Deglaze the pan by adding the stock and scraping the bottom of the pot.

Place the pork back to the pot and cook on manual high pressure for 5 minutes.

Transfer the meat to a cutting board, let it rest and then slice it.

Set the pressure cooker to sauté and add the cornstarch mixed  with water.

Allow the sauce to thicken, then add the medallions back to the pot.

Serve and enjoy!

When sautéing the pork, if your Instant Pot gets too hot and starts browning things too fast, turn the sauté function off for 1-2 minutes. Then turn it back on.
