Instant Pot Beef Stew

By far the best beef stew I have made in the instant pot. I’ve been trying different recipes I found online and this one is a winner. Making it again next week.

Onions and Garlic

Carrots and Potatoes

Broth

Beef

+

Peas

+

Tomato Paste

+

Flour

Worcestershire sauce

+

Food Coloring

+

Fresh Thyme and Parsley

Fresh Bay Leaf

+

Salt and Black Pepper

In a bowl, toss the beef with the flour and season with salt and pepper to taste.

Turn the Instant Pot to “sauté” and cook the beef in batches. Then set aside.

Add the onion, then the garlic and tomato paste and cook for a few minutes.

Add the beef broth and deglaze the pot by scraping the brown bits from the bottom of the pot.

Return the beef to the pot, add the rest of ingredients and stir to combine.

Seal the Instant Pot and cook on high pressure for 35 minutes

Open the lid and press “sauté”. Stir in peas and cook for a couple of minutes.

Take out the bay leaf and season to taste.

Serve and enjoy!

Cut the vegetables in larger pieces to prevent them from overcooking.
