To make the Mornay Sauce, whisk flour over melted butter.

1

Gradually whisk in the warm milk and cook whisking frequently until the sauce thickens.

2

Beat the egg in a small bowl and gradually, pour about 1/4 cup of the warm sauce.

3

Cook the egg mixture on low heat whisking frequently. Stir in the cheeses.

4

Season with nutmeg, salt and and a couple cracks of fresh pepper.

5

To make the sandwich, drizzle olive olive over the bread slices.

6

Broil both sides of the bread until lightly toasted.

7

Top a slice of toast with the sliced turkey and tomato, season it and broil.

8

Spoon the mornay sauce over the sandwiches, sprinkle with extra cheese and broil.

9

Top each sandwich with strips of crispy bacon and sprinkle with fresh thyme.

10

Serve and enjoy!

When making the roux for the cheesy mornay sauce, cook the flour and butter together for 2-3 minutes to get rid of the “raw flour” taste.
