Greek Spanakopita

This is just how my grandma’s spanakopita tasted. Thank you for this recipe and for giving me a trip to memory lane.

INGREDIENTS

Spinach

Feta Cheese

Greek Yogurt

+

Eggs

Dill

+

Lemon

Phyllo Dough

Butter

Salt

Black Pepper

Drain the spinach well.

Place the drained spinach in a large bowl and mix all the ingredients.

Lay 1 phyllo sheet on a buttered parchment and brush it with melted butter.

Repeat with 9 more phyllo sheets, brushing each one with butter.

Spread the spinach mixture over the phyllo, leaving a border on all sides.

Cover the spinach with a sheet of phyllo, brush it with butter and sprinkle it with Parmesan cheese. Repeat.

Bake until the phyllo is golden and crisp.

Serve and enjoy!

Squeeze as much liquid from the spinach as possible. Wet spinach can ruin the whole dish.
