Cuban Ropa Vieja

The secret to making the best Cuban Ropa Vieja is to braise or slow cook the meat over low heat in a pot or Dutch oven, or in a slow cooker or crock pot.

Crushed Tomatoes

INGREDIENTS

Garlic Cloves and Onion

Salt and Black Pepper

+

Bell Peppers

+

Flank Steak

+

White Wine

+

Chicken Bouillon and Broth

Celery, Carrots and Olives

Tomato Paste

+

Sweet Paprika and Allspice

Cumin and Oregano

+

Ground Cloves and Bay Leaves

Capers and Sliced Pimientos

Add the beef to a large pot or Dutch oven and sear on both sides.

Cook the vegetables until they become tender. Then, stir in the tomato paste and seasonings.

Deglaze the pan by adding the wine. Then stir in the broth and crushed tomatoes.

Return the beef to the pot, and add the carrots, celery and bay leaves.

Bring to a boil then cover the pot, transfer it to the preheated oven and cook.

Remove the beef from the pot and shred it into thin, long shreds.

Return the beef to the pot, stir the rest of ingredients and simmer until the sauce thickens.
