Chocolate Covered Strawberry Cupcakes

These are so cute. Delicious too. Great for Vday or any holiday though. I will just use different theme sprinkles

INGREDIENTS

Flour

Milk

Egg

Baking Soda

Vegetable Oil

Vanilla Extract

Salt

Dark or milk chocolate chips

Strawberries

Butter

Powdered sugar

Food Coloring

Whisk together the dry ingredients.

Combine the egg, milk, oil, and vanilla.

Add the wet ingredients to the dry ingredients and mix until combined.

Pour the water into the batter and mix well.

Pour the batter into the cupcake liners.

Bake and cool before frosting.

Puree the strawberries until smooth and strain.

Beat the butter, powdered sugar and strawberry puree.

Pipe the frosting onto the cooled cupcakes.

Melt the chocolate chips in the microwave until smooth.

Dip each strawberry into the chocolate.

Gently, dip them or roll them into the sprinkles.

Serve and enjoy!

Strain the strawberry puree before making the buttercream. You want a smooth frosting without any seeds.
