Chickpea Soup

WHY YOU'LL LOVE THIS RECIPE?

Hearty chickpeas and veggies make this delicious soup filling. Protein-packed chickpeas makes this hearty soup good for you!

Sauté the onions, carrots, celery, red bell peppers and potato.

Stir in the garlic, spices, seasonings and sauté for a couple of minutes.

Add the chickpeas, crushed tomatoes and broth, bring to a boil and then simmer.

For a creamier consistency, remove about ½ cup of the soup and blend it until smooth.

Return the blended soup to the pot and stir to combine.

Remove the soup from the heat and stir in fresh parsley and lemon juice.

Serve and enjoy!

Draining the garbanzo beans in this recipe is optional. To be honest, I rarely drain beans when making soup.
