Chicken Pozole Verde

I’ve tried a few pozole recipes and this one is by far the best! It turned out so good. Comfort food in a bowl!

Tomatillos

INGREDIENTS

Chicken Stock

Poblano Chiles

+

Jalapeno Peppers

Chicken

+

Dried Oregano

+

Ground Cumin

+

Ground Coriander

+

Bay Leaves

+

Lime Juice

+

Lime Juice

Hominy

+

Salt and Black Pepper

Sauté the onions, chiles and garlic.

Stir in the tomatillos and sauté, until the peppers have soften.

Place the mixture into a blender, add chicken broth and cilantro and blend until smooth.

Return the blended mixture to the pot, add the remaining broth and seasonings.

Add the chicken and bring to a boil. Then simmer until the chicken is tender.

Transfer the chicken to a plate or cutting board and shred it.

Return the chicken to the pot, stir in the hominy and cook for a few minutes.

Serve and enjoy!

Make sure not to overcook the chicken. Cook it just until it’s easy to shred.
