Chicken Enchilada Soup

This soup is one that my family would absolutely love! I also love how easy it is to prepare, it’s perfect for a busy weeknight!

Masa Harina

INGREDIENTS

Black Beans

+

Chicken Broth

+

Cream Cheese 

+

Enchilada Sauce

+

Cheddar Cheese

+

Onions and Garlic

+

Green Chiles and Corn

+

Fire-Roasted Tomatoes

+

Chili Powder and Paprika

+

Ground Cumin

+

Chicken

+

Salt

+

Sauté onions and garlic.

Sprinkle the masa harina and slowly add some of broth

Stir in the green chiles, tomatoes, spices, enchilada sauce and chicken broth.

Add the raw chicken, black beans and sweet corn. Bring to a boil, then simmer.

Shred the cooked chicken with two forks and then return it to the pot.

Add the softened cream cheese and stir until melted.

Remove the pot from the heat and stir in the shredded cheese.

Serve and enjoy!

You can fin masa harina in the baking and/or ethnic-Mexican aisle of any grocery store
