Beer and Cheese Soup

WHY YOU'LL LOVE THIS RECIPE?

If you are not a beer fan or a huge fan of soup in general, the smoky and cheesy flavor of this hearty soup will be enough to make you want to make it again and again.

Cook the bacon until crispy and transfer it to a plate lined with paper towel.

Leave about two tablespoons of bacon drippings and sauté the veggies.

Melt butter and sprinkle the flour to make a roux. Cook until lightly browned.

Gradually, pour all the liquids, bring to a gentle bubble and simmer.

Gradually, add the cheeses, mixing after each addition, until is fully melted.

Add half of the cooked bacon into the soup and season to taste.

Serve and enjoy!

Add the cheese a bit at a time, stirring between each addition. Add additional cheese once the previous addition has melted.
