with Grand Marnier Cream Cheese Frosting

WHY YOU'LL LOVE THIS RECIPE?

Both the cake and the frosting get a little oomph from Grand Marnier liqueur. This elevates the cake to gourmet-bakery status. Crushed pineapples also brighten up the spiced cake beautifully.

In a medium bowl, combine the dry ingredients.

In a different bowl, mix the wet ingredients.

Add the flour mixture to the wet ingredients.

Fold in the shredded carrots, the crushed pineapples and the pecans.

Divide the batter between three 9-inch pans, and bake.

To make the frosting, beat all the ingredients listed until light and fluffy.

Spread the frosting and decorate.

Serve and enjoy!

If you want to omit the Grand Marnier in the cake batter, simply skip it! Also, orange juice can be used instead.
