Butterscotch Pudding

This turned out so creamy! and the salted caramel...wow. Thanks for the recipe.

Cornstarch

INGREDIENTS

Whole Milk

Heavy Cream

+

Butter

+

Dark Brown Sugar

+

Vanilla Extract

+

Scotch

+

Egg Yolks

+

Salt

Combine egg yolks and cornstarch.

Combine the brown sugar, salt and water and allow to cook until caramelized.

Add the milk mixture into the caramel, bring to a boil and then simmer.

Slowly pour some of the hot mixture into the egg mixture to temper it. Then cook until it thickens.

Remove from the heat, whisk in the rest of ingredients and pour into serving glasses.

Serve and enjoy!

Stay away from low-fat ingredients. Low-fat or non-fat milk will yield a thinner pudding that just won’t do the recipe justice!
