Bake the cookie crumb crust and let it cool.

Whisk the egg yolks until smooth.

Make Caramel by stiring together the sugar and 1/4 cup water.

Whisk the brown sugar, cornstarch, and salt. Add milk while whisking constantly.

Remove from heat and add in the caramel mixture.

Slowly add the hot liquid mixture into the egg yolks to temper.

Gradually combine the egg mixture with the remaining hot liquid, and bring to a boil.

Finish making the pudding by removing from the heat and stiring in the butter.

Assemble the pie and chill in the refrigerator for 6 hours to allow the pie to set.

Make whipped topping and spread it over the chilled pie.
