Black Bean Soup

This soup is the best I’ve ever had!

Tequila

INGREDIENTS

Onion and Garlic

Carrots and Celery

+

Broth

+

Black Beans

+

Canned Green Chiles

+

Cinnamon

+

Lime Juice

+

Dried Oregano

+

Ground Cumin

+

Salt and Black Pepper

Cilantro

To pot, add the onion, carrot, celery and garlic and sauté, stirring frequently

Add the tequila and cook until the tequila is almost all evaporated.

Add the beans, stock and seasonings and bring to a boil.

Cook beans according to instructions provided.

Using an immersion blender blend the soup until almost all of the beans are puréed.

Stir in lime juice and fresh cilantro and then, simmer the soup over low heat.

Serve and enjoy!

Additional broth  may be needed if the soup is too thick for your taste. Don’t use water which dilutes the flavor.
