Easter Bunny Cookies

These cookies were the best! My kids loved them.

Mini Marshmallows

INGREDIENTS

Salt

+

Vanilla Extract

Sweetened Coconut

+

Butter

+

Sugar

+

Flour

+

Candy Melts

+

White Chocolate

Beat together the butter and sugar in the bowl of an electric mixer.

Add the vanilla extract and mix until combined.

Sift together the flour and salt and add it to the butter mixture.

Mix on low speed until the dough starts to come together.

Dump the dough onto a lightly floured surface an shape it into a disk. Chill.

Roll the dough and cut into shapes.

Bake and cool on a cooling rack.

Melt the white chocolate and candy melts and dip the bottom half of the cookies.

Dip the marshmallows into the white chocolate and roll them into the shredded coconut.

Place the fluffy marshmallow on the cookie. Let it sit for about 10 minutes.

Serve and enjoy!

After I cut the dough into shapes, I like to chill the cookies in the fridge for 5 – 10 minutes, however this is not a necessary step.
