What to serve with French Potato Salad?

This salad is the perfect side dish for many dishes including: -Grilled BBQ Chicken Legs -Juicy Oven Baked Pork Chops -Roasted Cauliflower Steaks -Grilled Steak Tips -Cajun Grilled Shrimp

Place the potatoes in a pot of salted water and cook until tender.

In a small bowl, combine the broth and wine.

In another small bowl, whisk together the ingredients for the vinaigrette.

Drain the cooked potatoes and leave in a colander until cool.

Cut the potatoes in half and place in a serving bowl.

Pour the broth and wine combination over the potatoes and toss gently.

Drizzle the vinaigrette over the warm potatoes and gently toss to combine.

Serve and enjoy!

Make this salad ahead of time! The salad tastes better when it has had time to sit for a bit so the flavors can meld together. 1-2 days in advance is as early as I would make it.
