These aren’t just a simple side dish. They’re rich, smoky, and layered with flavor thanks to bacon, spices, tomatoes, and a splash of dark beer.

Soak the beans for 6 hours or overnight. Drain and rinse.

Transfer beans to a pot with water and a bay leaf. Bring to a boil, then simmer until tender but still firm.

Cook bacon until crispy, then transfer it to a paper towel-lined plate to drain.

Cook onion and jalapeño in the bacon fat.

Stir in garlic, chili powder, oregano, cumin, and salt. Cook until fragrant.

Add diced tomatoes and beer, return beans and reserved liquid to the pot and simmer.

Cook for about 15 minute, then stir in bacon and cilantro.

Serve and enjoy!

Soak the beans overnight and cook them with the bay leaf only. Ingredients like salt and tomatoes can actually slow down the softening of the beans.
