Easter Carrot Patch Cupcakes

Rich chocolate cupcakes are topped with silky ganache, “dirt” made from crushed Oreos, and the cutest little candy-coated strawberry “carrots.”

Sour Cream

Coffee

Heavy Cream

Strawberries

Microwave chocolate, cream, and butter and stir until smooth and glossy. Let sit until spreadable.

To make the cupcake batter, whisk the dry ingredients.

Cream butter and sugars until light and fluffy.

Add the eggs and vanilla

Combine buttermilk with coffee

Alternate adding buttermilk mixture with dry ingredients, and mix just until combined.

Pour batter on prepared pan and bake

Dip the washed and dried strawberries in melted orange candy melts.

Sprinkle each berry with sanding sugar.

Remove a small center from each cupcake and spread the ganache.

Cover with crushed Oreos and nestle the "carrots" into the center.

Make sure your strawberries are room temperature and completely dry. Any moisture can cause the chocolate to seize or not stick properly.
