One Pot Hainanese Chicken and Rice

Add the rinsed rice, scallions, ginger and garlic to the rice cooker.

Add the chicken stock and stir in salt and white pepper.

Add the chicken ensuring it sit slightly submerged, and cook using the white rice setting.

To make the sauce, heat the oils on a skillet until hot and carefully pour it over sliced scallions.

Season with salt (or soy sauce) and a squeeze of fresh lime juice, if desired.

Transfer the chicken to a cutting board and slice it. Also, fluff the rice with a fork.

Serve and enjoy!

Use skin-on chicken for best results. As the chicken cooks, fat slowly renders and coats the rice grains, enhancing flavor and improving mouthfeel.
